Stepping away from the showmanship they’re known for, Hunter Gregory and Steven Payne held a pre-service masterclass at MGallery’s Playford Hotel in Adelaide, focusing on what really matters behind the bar: a deep understanding of the classics.
Rather than reinventing the classics, they focus on consistency – and here’s their go-to recipe for delivering their crowd-favourite Maybe Margarita perfectly, every time.

- 20ml Cointreau
- 30ml lime
- 5ml agave syrup
