The Waratah Neighbourhood Mix

The Waratah unveils biggest Neighbourhood Mix lineup yet

The Waratah is rolling out its most ambitious run of Sunday takeovers to date as part of its ongoing Neighbourhood Mix series, inviting standout bars from across Australia – and now overseas – to showcase their identity to the local community.

On Sunday 14 September, the Darlinghurst venue will welcome Singapore’s Jigger & Pony – ranked #5 on The World’s 50 Best Bars – for a one-night takeover. In partnership with Espolòn Tequila, Principal Bartender Saverio Casella and Assistant Principal Bartender Daniel Chen will take charge behind the bar, bringing the signature hospitality and cocktail style that has made Jigger & Pony one of Asia’s most celebrated venues.

Following Jigger & Pony, the series will continue with back-to-back takeovers from two Australian heavyweights: Brisbane’s Savile Row on Sunday 21 September, and Melbourne institution Black Pearl on Sunday 28 September.

The Neighbourhood Mix series launched earlier this year when Eduardo Conde and Omar Alvarez from El Primo Snachez brought bold Mexican flavours to the neighbourhood bar. The bar takeover programme is rooted in community and collaboration, says Cynthia Lister, Co-founder of The Waratah and Director of Pollen Hospitality.

“Darlinghurst has always had this magnetic sense of community – it’s vibrant, diverse and full of character. With The Neighbourhood Mix, we wanted to honour that spirit by opening our doors to the incredible talent that makes Sydney’s hospitality scene what it is,” Cynthia explained.

“This series is about connection and community – sharing stories, drinks, food, and having a bloody good time with the people around us. That’s what neighbourhood bars are all about.”
