The Cambridge Shaken Leaf

The Parisian cocktail looking to empower bartenders globally

by Andy Young

Bartenders across Australia and the world will now have access to an online platform called ‘Shaken Leaf’ which aims at providing bartenders with easy access to learn more about sustainability practices.

The platform has been launched by award-winning Parisian bar, The Cambridge Public House, which has had sustainability and community at the heart of everything it does since it opened in 2019.

Hyacinthe Lescoet and Hugo Gallou, co-founders of The Cambridge Public House, said: “As a team, we’ve always believed in supporting our community and leading positive change. Shaken Leaf is our way of sharing the knowledge we’ve gained and inspiring a new wave of eco-friendly bartending practices.

“We can’t wait to see the impact this has on our community, and we’re excited to continue helping those in the industry.”

The Shaken Leaf platform is a collaborative platform that offers bartenders practical tips, real-life case studies and expert opinions on implementing sustainable practices in their venues.

Key areas of focus on the platform include reducing waste, sourcing eco-friendly ingredients, optimising resources, and integrating sustainability into daily operations.

One feature of the website is a cocktail database, listing a wide variety of cocktail recipes, garnishes, and mixers, each with a sustainability score and the ability to filter based on ingredients, dietary requirements, and eco-friendly metrics.

This initiative stems from the team’s commitment to fostering a more eco-conscious hospitality industry and follows the bar’s recent B Corp certification.

More information on how you can improve sustainability practices in your venue are available through the Shaken Leaf website.
